George Foreman Lean Mean Fat Grilling Machine







This recipe is for hamburgers, zucchini and potatoes.  This model GR15BWL will warm the buns at the same time in the same machine.  Since there was a bare space on the grill, I added pork sausages and will use them later for another dish.  Tip:  if you are cooking a lot of meat, pour the drippings from the tray into a glass container, cover with a lid and place in the fridge.  After it cools, you can remove the hardened fat and throw it away.  What is left is pure bouillon.  Use within a couple of days or place in the freezer with the amount, date and item name for a later use.  It's good for making soup, gravy, etc.  Sometimes I will cook many different kinds of meat at one setting (for a one time clean up).  Then I'll freeze it for later individual servings.

 I've had this machine for over 15 years.  I bought it to take to Thailand for when I lived there so I didn't have to use a gas stove and then it was very hard to buy a hamburger there.  The bun warmer feature is nice.  It is difficult to clean the grill part though.  I found by using about 6 folded paper towels saturated with water on the grill top after I was finished cooking really helped to loosen the stuck on stuff.  Put it on while the machine is unplugged and hot.  It helps to steam and loosen what is sticking to the grill surface.  I also found for storing it, to separate the lid from the base with a very thin food safe foam layer, or a dry hand towel/ wash rag.  Later this month or next month I will show you another George Foreman grill that is much easier to clean then this model.



ZUCCHINI SLICES





1.  Brush the grill base with oil.

2.  Lay 1/8" zucchini slices over the grill surface.  Brush with canola, olive oil or another oil.  Sprinkle with your favorite seasonings,spices, herbs:  fresh or dried.  I used black pepper, garlic salt (very very very lightly sprinkled!) on the back layer.  The center layer:  salt free 17 seasoning with very very very slightly sprinkled onion salt. The front layer:  Italian seasoning and dry Parmesan cheese, salt optional.  Because the slices are so thin, too much salt will ruin the slices.  My favorite is of course, the garlic one.

3.  Brush or spray oil on the vertical grill top.

4.  Close lid, plug in cold grill.  Place drip tray under the front of machine.  Set timer for 4-5 minutes.  Check for doneness.










Try with other vegetables too, like these potato slices cooked for about 8 minutes and sprinkled with a very very very light sprinkling of seasoning salt.







ZUCCHINI COINS


Same as above but slice in 1/2 " rounds at 8 - 9 minutes grilled.  Test for doneness.  I also sprinkled them with the butter seasoning before serving.










HAMBURGERS


1.  Place frozen seasoned burgers and pork sausage links or chicken tenders on the cold grill.  Close lid, no need to oil grill.  Plug in and set timer for 10-12 minutes.  Check for doneness.

2.  Set room temperature or frozen buns in warming/toasting top section, cut side down, close lid.

3.  Check the meat for doneness.  Add cheese, now after lid is up or add directly in the sandwich.  Now it is ready for all your favorite toppings like:  tomato, lettuce, ketchup or B-B-Q sauce, Miracle Whip, mustard, pickle, sliced onion and crispy bacon.  Just assemble and eat.

Induction Cooktop Update - Salmon Caseades



I'll be using the Lodge cast iron 10" griddle today.  This high quality cast iron pan came pre-seasoned and is one of my favorites in my cast iron pan collection.  It also is excellent to use for a pizza pan.

Love Salmon. It also is the ultimate brain and complexion food. Want to get ready for a reunion/event Dr. Perricone says eat a Salmon meal once daily for at least a week and see the difference in complexion and thinking ability. "


 I did take her advice and have tried the challenge and I did notice a difference in more clarity in brain function and the liver spots are not as noticeable on the face.  Following is one of the meals I made while on it.








Salmon Caseades




4 corn/flour tortillas- brush oil on the pan and lay them hanging over and around the outside of the pan.

Beans, cooked and drained - add a spoonful on the center inside of half of the tortilla.

Salmon/Spiced meat/Crab - add a spoonful of your favorite cooked meat.

Cheese - add mozzarella, Mexican blend or your favorite melting cheese.

Hot Sauce - add some if you like.

Fresh Herbs - finely chopped onions, green onions, basil, cilantro, etc.

Optional Toppings - left over things like rice, black olives, corn, avocado, vegetables, etc.

Set pan on the machine.  Set settings on:  kettle at 350-400.  While pan is cold, add ingredients in the following order listed above.  When golden brown, use a spatula to lift the tortillas, brush pan area with more oil if needed, fold filled tortilla in half and turn them upside down in the pan.  Turn off heat.  Allow a few minutes to brown on the 2nd side.  Adjust the temperature as cast iron can over heat so you may need to lower the temperature.

Farberware Toaster Oven - Update with Salmon

Ohh la la! I've found myself a new favorite salmon recipe!  It's easy, just buy it from Aldi, it is already seasoned to perfection.  If you can't locate a Aldi close by, I've listed the ingredients if you want to try it on your own.  This is farm raised and pink dye is added to the fish food.  To find undyed, make sure to buy ocean caught for a healthier choice.  I've served it with a baked potato, steamed or fresh carrots, and herbs:  parsley and chives or with rice and  fresh herb butter.  I like the crispy edge from the broiling.  I will buy this Aldi product again.  Now I'm going to keep this machine around because I've found 2 excellent ways to use it:  this article and the rotisserie chicken.








Fresh Broiled Salmon with Mediterranean Herb Seasonings (dehydrated vegetables:  garlic, red and green pepper, onion, green onion and lemon peel), sea salt, spices, and demerara sugar.



Brush pan with olive oil.

Place 1 package .69 pound of Fresh Salmon with Mediterranean Herb Seasonings (Aldi), spice side up,  in the center of the oiled pan.

Slide pan into the top level of the toaster oven.

Set the following buttons to:
          Temp:  450 degrees
          Function:  Broil
          Time:  set for 10 minutes, I then removed the very thin cooked section then placed it back in the oven for 10 more minutes for the thick part.  You are needing a 145 degrees internal temperture or if it flakes easily.  Note that your machine may cook this twice as fast so check it half way through.  Also the moist package of salmon caused the vegetables to rehydrate.  If using fresh herbs, mince them very finely.

Farberware Toaster Oven and Rotisserie Oven

I've used many different types of toaster ovens through the years.  For me, the simpler, the better.  I like using them for toasting, broiling and for making garlic bread.  I seemed to have better success using them for broiling then the one in the oven as it was so easy to burn things quickly in the regular oven's broiler.

I had a favorite toaster oven when I lived in Thailand and used it for brownies, cakes, cookies and all kinds of things.  It had pans that were the rack and pan combo.  It came in really handy as I could carry it and step outside the kitchen door into the outdoor kitchen and use it there so it didn't heat up the inside of the house.  I was able to find nice,  quality stainless steel baking sheet pans that fit into the rack grooves so it served as  a pan/rack  combo, before I even left the store so I knew if would be the perfect fit.  It also had a regular rack so other small pan shapes could be used and 4-5 levels with a convection oven fan so it cooked faster than the regular oven.  It also had a rack with a lowered angle level that helped at times when needing a wider space between the racks.

While at collage, I remember using a shallow toaster oven that had a simple long handle connected to the rack for sliding it in and out when finished cooking.  That kind worked well for a burrito, cascades ( lay the tortilla flat, buttered side down and spread thinly over the whole top with re-fried beans, seasoned cooked meat and cheese, hot sauce or other favorite toppings.  When done fold over in half or fold in edges and roll up.) For nachos it's great too, or you could spread out a casserole really thin across the pan and heat it up for a one person serving.

My least favorite toaster oven is the one I have now and will be demonstrating with today.  Why?  Because it was advertised to be a convection oven also.  But doesn't work well for that.  It took a lot longer trying to bake cookies in it than in a regular oven and the fan worked very faintly and slowly.  But it does do a nice rotisserie chicken, though it's not easy to clean up from that.  Just make sure you use a smaller size chicken,  wrap it with string tightly and firmly tie it off, so that it has room to turn freely.  I do like the built in timer and shut off feature.




Kelly's Nachos


Layer tortilla chips on a pan that will fit in the toaster oven, in a single layer.

Thinly spread with re-fried beans, top with seasoned meat (shown here: 1- leftover baked chicken leg or 1/3 cup meat, remove fat and skin, grizzle and bones, place in a bag with 1/2 teaspoon low sodium dry taco seasoning mix and shake).  Turn on the toaster oven to the Function:  Bake;  Temp:  350 degrees  and set Time:  for 10 minutes.    

Optional:  Add taco sauce and shredded cheese, return to toaster oven for 1 minute to melt or leave unmelted and serve them now.  It helps to have a deep lip or edge on the plate for if needing to carry the plate or move it.  The chips can very easily slip off a regular plate.

Add any of your favorite toppings:  sliced black olives, sliced avocados, finely shredded lettuce, chopped tomatoes, sour cream, onions, chopped fresh cilantro or hot peppers, etc.












The lip of this dish is barely raised and one of the chips slid off when I moved it.


 This pasta/soup plate with it's double or triple deep well shown below is a better choice and none slid when moving it.

Black & Decker Citrus Juicer







Blood Grapefruit Juice


Slice the grapefruit in half.
Set the pulp lever for minimum or maximum.
Press cut side down on top of dome.
Press down, cupping hand around the rind while machine removes the juice.
This made 4 oz. of juice from 1 grapefruit.
Lift pitcher straight up to remove and pour into a glass drinking container.
3 fruits made 14 oz. of juice.

You can freeze some of this into cubes and add one to your smoothie for a burst of flavor.

Discard or eat the sweet pulp.














Save and plant the seeds to grow your own tree.  The peels and pulp can also be used in your garden on top of the soil, not touching the plant but under the plant that you want to fertilize or it can be added to your compost bin.

Kelly's Pink Lemonade


3 lemons
1/2 cup sugar
4 cups water or filtered water
1 frozen pineapple and grape juice cube
1 maraschino cherry

Follow the instructions from above but remove the larger dome, leaving the smaller one underneath which is used for lemons and limes.  3 lemons made 4 oz. of juice.
Stir lemon juice and sugar in a pitcher.  Slowly add the water while stirring the mixture.  In a glass or crystal pitcher,  it's best to use a food safe plastic utensil to stir with.  I substituted the stainless steel one because I couldn't find my plastic one this morning.  All citrus drinks should be stored and served from a glass container because of the acid content in the fruit.

Drink this just as it is,  over ice for lemonade or add a frozen grape juice cube or 1 tablespoon Welches frozen grape juice concentrate or grape syrup.  This will turn it to a pink color.  You can add more sugar if you will be adding a lot of ice to the drink.  As the juice cube melts it will turn the drink a pink tinted color.

To make the pineapple grape juice cube:  send only the peelings and core from a organic pineapple through a regular fresh fruit juicer after you have sent some clusters of organic purple grapes with the stem through the machine.  We will be showcasing this type of juicer in a later blog.  Stir and pour this into a ice cube tray and place into the freezer.  After it is frozen, place the cubes in a content and dated labeled freezer bag and use as needed.  Some times if there is just one tray, I will place the juice filled ice cube tray inside a plastic or zip-lock bag and freeze it.
